Cotechini
The ingredients are: pig-skin and selection of various cuts, finely minced. It requires slow boiling for two hours after piercing the extern skin. With side dish of lentil it is considered an omen of Good Luck.

Finely grained, they can be boiled, grilled. We use only choice meats with a low fat content.

Liver mortadella
This is a typical local product. In our recipe we use 30% liver plus pork meat. It requires boiling for one hour, after piercing the skin. It can be eaten uncooked if well seasoned.
